Bar CUT believes that great flavors deserve to be deconstructed, preserved, and reimagined.
To this end, Bar CUT has built a “Flavor Bank”, where local ingredients are carefully broken down through elaborate pre-processing.
When crafting each cocktail, the team draws from memory to select ingredients treated with different methods, blending and recombining them into something new.
This process mirrors what distillers do with various base distillates and cask-aged components, and Bar CUT calls it “CUT”.
