Bar CUT 的核心是材料。Bar CUT认为，好的风味需要被拆解、被保存、被重新剪辑。为此，Bar CUT 建立起一座 “风味银行”，将本地食材通过复杂的预处理逐一拆解，在创作每一款鸡尾酒时，其团队会根据记忆，挑选不同处理方式的原料进行调配与重组。这个过程，恰似蒸馏师面对各类蒸馏素材与桶陈素材时所做的工作，Bar CUT 将其命名为 “CUT”。在这里，一杯鸡尾酒可以像一部电影一样诉说一个故事。 At Bar CUT, everything revolves around ingredients. Bar CUT believes that great flavors deserve to be deconstructed, preserved, and reimagined. To this end, Bar CUT has built a “Flavor Bank”, where local ingredients are carefully broken down through elaborate pre-processing. When crafting each cocktail, the team draws from memory to select ingredients treated with different methods, blending and recombining them into something new. This process mirrors what distillers do with various base distillates and cask-aged components, and Bar CUT calls it “CUT”. Here, a single cocktail can tell a story just like a film.
